A few days ago, I posted a recipe for the Perfect Grilled Cheese. This grown up caprese grilled cheese is that sandwich taken to a whole new level.
If you’re making dinner for the family, the kids can have the regular version while the adults indulge in this grown up version. No need to sacrifice the quality of your meal to keep the kids happy! This grilled cheese is made in the same way as the Perfect Grilled Cheese with just a few extra ingredients.

Here’s how you make a grown up caprese grilled cheese:
Start by melting a tablespoon of butter in a large pan over medium low heat. Sprinkle a little bit of salt into the pan with the butter (secret #1).
Lay down the bottom piece of bread that’s been smeared with cream cheese (secret #2), cream cheese side up.
Lay on a few thinly sliced tomatoes.
Add on a few pieces of fresh mozzarella.
Lay on some leaves of fresh basil and sprinkle with freshly ground black pepper.
Top it off with a layer of cheddar cheese.
And finally, cap off the sandwich with the top piece of bread, smeared with a very thin layer of english mustard. English mustard tastes very different than american mustard and adds a nice zing to the grilled cheese. This ingredient is totally optional, so feel free to leave it out if it’s not up your alley.
Cover the grilled cheese (secret #3) with a lid while it cooks over medium/low heat.
Allow it to cook for several minutes, then check the underside for toasty-ness.
If the sandwich is golden brown or toasted to your liking, flip it over to toast the other side.
Again, cover the grilled cheese as it cooks.
Once the other side has toasted, remove the sandwich from the pan.
Cut the grilled cheese in half diagonally and admire the cheesy beauty!
This grown up grilled cheese will be the highlight of your day, week, month, maybe even your year! Make this delicious, cheesy, flavor bomb. You owe it to yourself!
Grown Up Caprese Grilled Cheese
- Farmhouse white bread
- Cream cheese
- Cheddar cheese
- Mozzarella cheese
- 1 tbs butter
- 1 tomato, sliced thinly
- 3 to 4 leaves of basil per sandwich
- english mustard (optional)
Melt the butter in a pan over low heat. Sprinkle a pinch of salt in the pan and smear the butter around to coat the entire pan.
Generously spread cream cheese on one side of one slice of bread. Once the butter has melted, place the slice of bread, cream cheese side up, in the pan. Lay the tomatoes, mozzarella, basil, and cheddar cheese on the bread (in that order) and lightly season with freshly ground black pepper.
Spread a thin layer of english mustard on the other slice of bread (optional) and place it on top of the sandwich.
Cover the sandwich with a lid and allow it to cook for 2 to 3 minutes.
Remove the lid and lift the sandwich to check how much it has toasted. If it is golden brown, or toasted to your liking, flip the sandwich over and cover it. Allow it to cook another 2 minutes.
Check the bottom side of the sandwich and if it has toasted, remove the sandwich from the pan.
Slice it diagonally in half and enjoy!
