Thank goodness it’s Friday! Here’s the recipe for one of my favorite drinks from Italy to get you through the last workday of the week.
A bellini is a classic Italian drink, traditionally made with fresh peaches, though it’s also very common to use frozen. When we were on the Amalfi Coast for our anniversary, this was my favorite drink to order beach side.
It’s light, refreshing, and completely delicious. It also only requires two ingredients!
You can put a bellini together in no time at all making it perfect for a cocktail party or get together with friends.
Here’s how you make it:
These instructions are per drink
- 2 oz peach puree, fresh or frozen are both fine
- 4 oz Prosecco
Note: If you can’t find Prosecco (Italian sparkling white wine), you can substitute champagne or another good sparkling white wine. I’ve linked a good Prosecco below.
- If not already pureed, puree the fresh or frozen peaches in a blender
- To a champagne flute, add 2 oz of the peach puree and 4 oz of Prosecco
- Gently stir and serve!
